Avocado, avocado, avocado; yep, just keep repeating those words, it’s like music to my ears! This green, creamy fruit is like a glorious emerald jewel in the world of food! Hands up if you agree!

Here are some interesting facts about avocados that will explain why they’re so nutritious and up your ability to win your next game of Trivial Pursuit:

  • They contain more potassium than a banana
  • They’re really high in fibre so great for you poop-ability potential (a.k.a. digestion)
  • High in Vitamin K (good for bone health), folate (good for expecting mums), phytochemicals such as lutein & zeaxanthin (good for eye sight) and magnesium and vitamin C, E and B-6.
  • They’re a great source of monounsaturated fat which helps boost HDL cholesterol (the good cholesterol) and reduce LDL cholesterol (the not-so-good cholesterol)
  • They’re the Aztec symbol of love and fertility (just in case you were wondering)
  • It’s sometimes referred to as the Alligator Pear because of its rough, green exterior and when you cut it open, it looks like an alligator eye!

There are two ways I love to eat my avocados:

  • I love to eat them while they’re naked and
  • I love to eat them when they’re dressed up for a party

Let me clarify the difference between naked avocados and party avocados.

NAKED AVOCADOS

These are avocados you see lying naked on Paradise Beach (famous Greek Island nudist beach) each year when summer rolls around in Europe.

Actually, no they’re not…

Naked avocados are just avocados cut in half with nothing added to them. It’s the pure green flesh you can eat from the skin like a portable, green, creamy sundae.

PARTY AVOCADOS

These are the avocados you see dressed in bright, flashy crop tops, wielding glow sticks at the Greek Island bars come 2am each year when summer rolls round in Europe.

Actually, no they’re not…

Party Avocados are just avocados cut in half, piled high with yummy toppings like herbs, tomato, bacon, mushies, tuna and other delicious morsels. Coincidentally, they look just like the avocados below!

They’re a portable meal, just like a sandwich, but without all the gluten and grain. Pretty cool right? How amazing would it be to tuck into one of these at lunchtime instead of that soggy salad sandwich that tastes like the bottom of your handbag? Your taste buds will thank you for eating it and so will your body (because of all the nutrition benefits listed above)!

TO MAKE THE FOLLOWING PARTY AVOCADOS

Simply cut an avocado in half, scoop out a little of the flesh to make more room for your fillings (eat what you scoop out), and fill them up with any of the ideas below, or create your own!


ITALIAN AVOCADO

Mix together some tomato, basil and either some bocconcini, goat’s cheese or feta (cheese it optional, it’s technically not paleo but many people on a paleo diet still eat it). Spoon onto avo and drizzle with some balsamic vinegar.

 

 

 

 


 

MANGO AVOCADO

Mix together some chopped mango, macadamia and shredded coconut. Spoon onto avo. Also tastes good with berries too.

SALSA AVOCADO

Mix together some diced tomato, onion, coriander and lime juice. Spoon onto avo.

DON’T GO BACON MY HEART AVOCADO

Sauté together some chopped bacon, onion and mushroom in a hot frypan until cooked. Spoon onto avo and optionally drizzle on some coconut aminos.

EGG AVOCADO

Crack an egg into your avocado and bake in a 180°C oven for 10-12 minutes or until the white is cooked through.
