Ok, so Christmas is about a lot of things, but for me it’s really about Gingerbread! Boys, girls, houses… I don’t really care as long as it tastes great! So, we have teamed up with our great friend Miranda @clean_treats who has come up with this ripper of a recipe just in time for Christmas! Woo hoo! Don’t you go leaving Santa ant Tim Tams this year, he is going to be wanting these bad boys for sure!

Makes 16 Pieces
Ingredients
  • 1/2 cup rumbles paleo almond butter
  • 1/4 cup ghee/coconut oil
  • 1/2 cup coconut sugar
  • 3 tbs molasses, coconut syrup or maple syrup
  • 1 egg (or egg substitute for vegan option)
  • 1 tsp vanilla
  • 3/4 cup almond meal
  • 2 tbs coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of sea salt
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 1 1/2 tsp ground ginger
  • 1/2 cup rumbles paleo choc rocks
METHOD
  1. Preheat oven to 180 degrees.
  2. Whisk together the first 5 ingredients until smooth.
  3. Mix through remaining ingredients.
  4. Transfer mixture to a lined baking tray and bake for 20 minutes or until lightly golden
  5. Eat them all!
