What! How could these 3 flavours make something that looks and tastes sooooo delicious!? Easy, Miranda at clean_treats  is how!

Enjoy making this one Rumblers!

Ingredients: 
250g Rumbles Paleo Cacao Kapow (approx 2/3 packet)
– 1 beetroot, scrubbed well but leave skin on
– 400g fresh strawberries, chopped
– 6 medjool dates, soaked in boiling water
– 1/2 tsp vanilla extract
– 3 tbs fresh orange juice (juice of approx 1 whole orange)
– 2 tbs rice malt syrup
Method:
1. Preheat oven to 180 degrees
2. Wrap beetroot in aluminium foil and roast until tender (approx 40 minutes)
3. Once the beetroot is cooked (should be able to put a skewer through it easily), let it cool then peel and roughly chop
4. Pulse in a blender the orange juice, beetroot, vanilla, rice malt and dates
5. Stir the strawberries through the beetroot mixture
6. Transfer to a baking dish and put back in the oven for 20 minutes to heat the fruit
7. Top the fruit mixture with Rumbles Paleo Cacao Kapow muesli and return to the oven for 10 minutes (if mixture is looking dry then drizzle a tablespoon of coconut oil over the top but you want the fruit to be hot and bubbling)
8. Serve crumble as is or with coconut yoghurt/ice cream!
