The most delicious Paleo Ice-Cream ever!!!
RECIPE
4 frozen bananas
2 tablespoons honey
1 can coconut milk (refrigerated overnight)
1-2 tsp cinnamon
DIRECTIONS
The night before making this recipe peel all your bananas, break them into small pieces, put in a container or snap-lock bag and freeze overnight. Also take your can of coconut milk and place it upside down in the fridge (we do this so the coconut cream sets at the top and the coconut milk stays seperate.)
The next day, when you’re ready to make the ice-cream, follow these directions.
Place the frozen bananas, honey and cinnamon in a high speed blender.
Open your coconut milk and scoop out the coconut cream and place into the blender.
Blend ingredients for 30 seconds on high or until smooth.
If the mixture is too thick, add in 2-3 tablespoons of the remaining coconut water.
Blend for a further 30 seconds and check to see if more coconut water is needed. Add as much coconut water as you need until you get the correct ice-cream consistency.
Blend until the ice-cream looks like ice-cream!
Serve with sliced bananas, crushed nuts or just on its own.
